Plum Jam Sponge

This is a deliciously simple Plum Jam Sponge recipe that you can prepare and bake in under 45 minutes!

Last month we launched a competition to win our heart shaped cake tin and a cooling rack, and our lucky winner was Rebecca Angela Lewis! Rebecca decided to show us what she had baked, so here we have her very own recipe and fantastic photo of her Plum Jam Sponge. Thanks very much for sharing your baking skills with us Rebecca, it looks fantastic!

 

Ingredients:

For the Cake

  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla essence
  • 2 eggs
  • Margarine
  • Sugar
  • Self Raising Flour
  • 1 jar of plum jam

Instructions:

Step 1- Weigh 2 eggs, and whatever the weight of that is, proceed to weigh the same amount of margarine, sugar and flour.

Step 2- Place the margarine and flour in a mixing bowl and mix until it turns fluffy.

Step 3-Add the vanilla essence and the 2 eggs to the mixture and mix together. It helps if you beat the eggs before hand.

Step 4-Once the eggs and vanilla essence are mixed in, sift the flour and baking powder in to the mixture and begin to fold in until it is part of the mixture as well.

Step 5-Take a heart shaped cake tin and layer it with grease proof paper to stop the mixture from sticking.

Step 6- Add a layer of plum jam and spoon in the cake mixture. You can use any type of jam, it doesn’t have to be plum!

Step 7-Bake for 25-30 minutes at 180 degrees celcius until the top turns a delicious golden brown colour. Allow the cake to cool for 10-15 minutes.

Step 8-All there is left to do now is enjoy a slice!

Marble Loaf Cake

This Chocolate and Vanilla marble loaf is a fantastic recipe for you to try at home, combining two of the nation’s favourite flavours in one delicious cake!

There is nothing better than a slice of loaf cake with a cup of tea or coffee! Since the Great British Bake Off is in full swing, we thought we would give you one of Mary Berry’s recipes to try for yourself at home. This fantastic Chocolate and Vanilla marble loaf looks incredible, and is extremely easy to bake!

 

Ingredients:

For the Cake

  • 225g softened butter
  • 225g caster sugar
  • 275g self-raising flour
  • 2 tbsp baking powder
  • 4 large eggs
  • 2 tbsp milk
  • Half tsp of vanilla extract
  • 1 and a half tbsp cocoa powder
  • 2 tbsp hot water

For the Icing

  • 25g butter
  • 15g of sifted cocoa powder
  • 1-2 tbsp milk
  • 100g sifted icing sugar
  • Roughly 25g of melted white chocolate

Instructions:

Step 1- Preheat your oven to 160C/325F or gas mark 3.

Step 2- Lightly grease a loaf tin and place a piece of non-stick baking paper in the tin, ensuring that it covers the wide sides and base.

Step 3- Put the milk, eggs, flour, butter, sugar, baking powder and vanilla extract in to a large bowl and mix together using an electric whisk. Then place half of the mixture in to another bowl, and put to one side for later. So now you have 2 bowls of cake mixture.

Step 4- In a separate small bowl, mix the hot water and cocoa powder together until it becomes silky smooth. Add this to one of the bowls of cake mixture once it has cooled.

Step 5- Put the chocolate and vanilla mixtures into the loaf tin you prepared earlier until all of the mixture has been used up.

Step 6- Bake the mixture for around 50 minutes to an hour until it starts to rise and move away from the sides of the tin. You’ll know when the cake is finished baking as it will be springy to touch. If it isn't, simply bake for a few minutes more. Once finished, allow the cake to cool slightly before removing the baking paper and place on a cooling rack to finish cooling.

Step 7- For the icing, you need to melt the butter in a pan to start. Once melted, add the cocoa powder and mix in for about 90 seconds. Add the milk and icing sugar and start to stir it in.

Step 8- Remove this from the heat and mix it together. Leave the icing for a while to thicken up.

Step 9- Once the icing has thickened, spread it over the cake, and finally drizzle the melted white chocolate over the top and leave it to set!

Step 10- The only thing left to do now is cut yourself a slice of this delicious cake!

If you want to bake a delicious treat for someone special, or whether you enjoy a bit of variation in what you bake, this chocolate heart cake recipe is guaranteed to satisfy your every baking need.

Valentines Day is a special occasion, as it is a great excuse to show the special person or people in your life how much you care about them, and this Chocolate Heart Cake will do exactly that! The combination of flavours will leave your mouth watering and it doesn't even take that long to bake!

 

Ingredients:

  • 180g soft butter
  • 180g caster sugar
  • 180g self-raising flour
  • 30g of cocoa powder
  • 3 large eggs
  • 2 tbsp of milk

For the Filling

  • 200ml of double cream
  • 150g of raspberries

For the Icing

  • 100g of dark chocolate
  • 30g unsalted butter
  • 2 tbsp of raspberry jam

Instructions:

Step 1- Preheat your oven to 180C/350F/gas mark 4/160 fan.

Step 2- Grease the base of an 8 inch heart shaped tin. A round cake tin is fine if you don’t have one.

Step 3- Mix the soft butter, caster sugar, self-raising flour, cocoa powder, eggs and milk in to a mixing bowl using a whisk, or if you are feeling particularly fancy, an electric whisk. Once it is all mixed together, empty the mixture in to the heart shaped tin. Bake the cake for 35-40 minutes until it rises well, and remove it from the tin and place on a cooling rack.

Step 4- Cut the cake in to two pieces so you are able to include the filling. To make the filling, whip the double cream until thick, and fold in the raspberries. Spread the mixture of the cream and raspberries over the bottom half of the cake, then add the top layer of the cake.

Step 5- To make the icing, add the 2 tbsp of raspberry jam to a pan and melt until it is runny, and then spread over the top layer of the cake.

Step 6- Then add the chocolate and unsalted butter to a small bowl and melt it over hot water. Ensure that the bowl doesn’t come in to contact with the water. Once this is complete, allow the mixture to cool.

Step 7-Once the mixture has cooled, spread it over the top of the cake ensuring that none of the mixture goes on the side of the cake. Let the icing set for an hour or so, and then you are ready to serve.

Step 8-We recommend serving with some double cream, or ice cream, enjoy!

Victoria Sponge

When you think of something to bake that is quintessentially British, you don’t need to go any further than a delicious Victoria Sandwich Cake.

To celebrate all things British, and the launch of the latest series of the Great British Bake-off, we give you this fantastic Victoria Sponge cake, an extremely easy recipe that will have your taste buds tingling from the moment you start preparing it until the moment you have your first bite!

Ingredients:

  • 3 eggs, beaten
  • 175g unsalted butter
  • 175g self-raising flour
  • 175g caster sugar
  • 3 tbsp of strawberry jam
  • 500ml of double cream

Instructions:

Step 1- Preheat your oven to 180C/350F or gas mark 4.

Step 2- Spread butter in two sandwich tins, preferably with a diameter of 20cm (8 inches).

Step 3- Add the unsalted butter and caster sugar to a mixing bowl, followed by the 3 beaten eggs.

Step 4- Add the self-raising flour (this should have been sifted), and put the cake mixture in to the two sandwich tins.

Step 5-Place in the centre of your oven and bake for around 20 minutes until the mixture turns golden brown. Remove the cakes from the tins and place on a cooling rack to cool.

Step 6-Take the 500ml and whip it using a manual whisk or an electric one if you want the machine to do the work! This should be done until the cream is thick.

Step 7-Spread the jam on one of the cakes and the whipped cream on the other before combining. Dust the cake with icing sugar before serving.

Step 8-That’s it, you’re done, all you have to do now is enjoy your delicious British classic cake!

Orange Drizzle Loaf

Though Jaffa Cakes are the subject of much debate (is it a cake or a biscuit? We’d go for cake personally), it is difficult to argue with their household name status.

If you are a fan of the sweet and tangy combination of chocolate and orange then this delicious loaf is most certainly one for you! This moist and fruity cake will get everyone talking, and we’re sure it will become a firm favourite in your household.

 

Ingredients:

  • 140g butter, softened
  • 200g self-raising flour
  • 1 1/2 tsp baking powder
  • 200g golden caster sugar
  • 3 large eggs
  • 6 tbsp milk
  • Finely grated zest 1 large orange
  • 3 tbsp orange juice
  • 50g golden caster sugar
  • 50g dark chocolate

Instructions:

Step 1 – Preheat your oven to 180C or gas mark 4. Butter and line the base of your loaf tin. Put all of your cake ingredients into a bowl and beat with a hand whisk, wooden spoon or an electric whisk if you’re feeling a little lazy. Beat the mixture for around 3 – 5 minutes until the mixture is light and fluffy.

Step 2 - Then gently spoon the mix into the tin and make sure the top is flat and level.

Step 3 – Bake your mixture for around 40 – 50 minutes or until golden brown and firm to touch.

Step 4 - Heat the orange juice and caster sugar in a small pan on a low heat. Stir until the mixture is completely dissolved.

Step 5 - When your cake is completely cooked, remove it from the oven and lightly spoon over the orange mix. Leave the cake to cool in the tin then remove and cool completely on a wire rack.

Step 6 – Break up the chocolate and melt over a pan of simmering water or in the microwave for around 1 – 2 minutes. Drizzle over the cake and leave to set. (Alternatively, you may prefer to use icing, as shown in the photo above.)

Step 7 – Serve and enjoy!
